Bellagio's high-end dinner destination fuses classy sophistication with eye-popping performances, a stunning view...and a guy on a saxophone.

The concept of the supper club has its roots in the Prohibition Era. Secret speakeasies, roadhouses, and "underground restaurants" eventually became full-service destinations. They offered a cocktail hour, dinner, and extensive live entertainment that segued into a nightclub atmosphere as evening turned into night. After the pandemic shutdown, supper clubs seemed like a sensible way to lure guests back into social outings. First came The Vegas Room, which yielded The Nevada Room (both now defunct), then Wynn's super-exclusive Delilah. All are very different, despite the same basic concept.

Delilah continues to prosper, and it's known for attracting top-tier celebrities. The "modern-day supper club" is elegant, lush, and of course being at Wynn Resort, quite expensive. But for me, it's also a bit stuffy. One might be inclined to call this particular venue "enjoyable" instead of "fun". Early this summer, Mayfair Supper Club acquired Andrew St. John as its Senior General Manager. Regular readers might recognize St. John from our two-part profile here and here. A veteran of high-end restaurants like Venetian's BOUCHON and Todd English's OLIVES, the former Pennsylvanian is thrilled to be a part of such a high-energy establishment.

Having a great staff and stunning talent makes the intricate operations of the Mayfair seem easy. As St. John told VEGAS 411 in March of last year, When you surround yourself with talent and amazing people, you have them at your side to accomplish everything. I trust my team and know that I can’t do it all by myself.” But that doesn't stop him from making a wonderful tableside Cherries Jubilee (more on that in a bit). If you're unfamiliar with how a modern supper club works, know that table reservations are typically allotted a two-hour visit. Guests are expected to order a complete dinner, not just appetizers or desserts. Business casual is suggested for men (no shorts, sleeveless shirts, or open-toed shoes). Elegant, dressy attire is recommended for the ladies. Children under twelve are not permitted. The main dining room at Mayfair Supper Club is a triumph of style, design, and functionality. Mayfair's anterior lounge is a great place to visit pre-dinner or hang out afterward. Choose from a lengthy selection of signature cocktails, spirits, and wines while enjoying music and an elegant atmosphere. The lounge opens along with the dining room at 5 pm daily, with deejays spinning hits in the later hours. If your focus is more on dining than the show, earlier reservations (between 5 p.m. and 7 p.m.) are suggested. The atmosphere is at its most elegant, with a live band that includes musical prodigy Patrick Hogan on piano. Crooners and songbirds stroll from table to table in period costumes, reminding you that life is a cabaret and their hearts belong to Daddy. Three salads start the list of appetizers, They are a Caesar ($25) The Wedge ($26), and Heirloom Tomato ($24). For seafood, Coconut Shrimp ($36) comes with lime and Rangoon cream. I chose Wonton Soup ($21) made with Wagyu beef dumplings, chili oil, and ginger. My guest was eager to indulge in Seared Foie Gras ($34) served with pecans and stone fruit puree over white chocolate brioche, all surrounded by colorful frisée (a curly endive). There's also an elaborate caviar service.

Entrees at Mayfair are distinctly American, featuring "Supper Club Classics" like a garlic-crusted Prime Rib ($88), New York Strip Steak ($75), and Whole Dover Sole ($132). The ever-popular, sharable 36 oz dry-aged USDA Prime Tomahawk ($275) comes with Cajun fried onion rings, Mayfair steak sauce, and bearnaise. If someone in your party answers to "Hey, Big Spender", they may wish to indulge in a Japanese A5 Wagyu Ribeye, which runs $380 for the 6 oz. cut and $560 for 9 oz. Other main courses include Grilled Pork Chop ($64), Roasted Half Chicken ($48), and Ora King Salmon ($54). Sushi fans can choose from seven varieties, including a Vegetarian Tiger Roll ($24), The Mayfair Roll ($29), Spicy Tuna Roll ($26), and A5 Wagyu Nigiri ($58). My companion chose Pappardelle Pasta ($43) combined with Italian eggplant, gremolata burrata, and Pomodoro sauce. For a side dish, she selected Creamed Spinach ($20). Both are pictured above. My main dish was an unforgettable vegetarian Cauliflower 'Steak' ($36) dressed with pistachio vinaigrette, crispy shallots, and radish (seen below). It paired beautifully with a bowl of Forest Mushrooms (also $20). In the mood for Grilled Shellfish? As you dine, you may notice the atmosphere around you becoming more "nocturnal". The changes are subtle yet effective, as lighting becomes dimmer, music becomes more sultry, and performers segue into more revealing costumes and mildly risque production numbers. [embed]https://vimeo.com/859978892[/embed] As the show evolves, the soundscape moves from a 1920s speakeasy setting through jazzy standards and the Rat Pack era. A handsome saxophonist strolls throughout the room, subliminally adding a sensual flavor to the entertainment..and your meal. Before you realize it, the Sax Man has brought you deep into the 21st century, where pop hits and dance beats are the norm. Your time in the main dining room may be winding down to a close, but not before experiencing a spectacular dessert. The Mayfair Dessert Menu is a delightful representation of sweet favorites. They include Coconut Cream Pie, Ice Cream Sundae with traditional toppings, and a Black Forest Cake. Their signature dessert is The Cigar, a cigar-like roll made from milk chocolate, pear mousse, and hazelnut crunch. It's served under glass with vanilla smoke. Our party selected Cherries Jubilee, prepared tableside by none other than Andrew St. John. The dish is created over an open flame in spectacular fashion. It's also an opportunity for the supper club's Senior GM to reveal his background in culinary arts. St. John is a graduate of New York's prestigious Culinary Institute of America and earned a Master's Degree in "Hotel and Restaurant Management" from Purdue University.
